Welcome to the Twelfth Edition of the Hakubaku Newsletter
Hello to all of our registered members.
Well, we have arrived at the business end of Autumn and the colder days are more noticable. There are more leaves on the ground than on the trees and I have begun to see ice on my windscreen when I go out to my car to go to work.
Our Autumn 2010 Seasonal Recipe competition has attracted a number of great recipes and we are about to start cooking up a storm - YUM (one of the best parts of my job). We encourage everyone to enter their favourite recipe using seasonally available produce. See our website for all competition details.
Lemon Grass is our vegetable focus for this newsletter. A vital ingredient in many Asian dishes, Lemon Grass has a distinctive lemon-like flavour and aroma. More on that below.
Hakubaku had an unexpected reminder of how the world is interconnected. We received an email this week from our customer in Thailand who is planning on placing an order but because of the recent political upheaval and rioting cannot access his place of business due to fires. Having seen much of the riots and chaos in the news, I am not surprised that his plans have had to be placed on hold temporarily.
While you know that these sorts of national events can have an international impact, you sometimes forget that they can directly affect the smaller businesses in a different country. We hope that Thailand can resolve its issues and once more be the smiling country that we know.
Our Autumn Seasonal Recipe Competition
No announcement of a competition winner this month. The winner of the Autumn 2010 Seasonal Recipe competition will be announced in the July newsletter.

Hakubaku Ramen with Stay Beef Stir-fry
- 270g packet of Hakubaku Ramen noodles
- 600g Beef strips
- 90g crunchy peanut butter (reduced fat if prefered)
- 60g soy sauce
- 1/4 cup brown sugar
- 2 tbsp water
- 2 tbsp lemon juice
- 1 tbsp peanut oil
- 1 chinese cabbage - core removed and shredded
- 1 red capsicum - core removed and sliced
- 3 spring onions, sliced on an angle
- chopped coriander to garnish
- Combine peanut butter, soy sauce, sugar, lemon juice and water in a small saucepan. Bring to boil over a medium heat and stir to combine. Simmer for a minute until the sauce thickens slightly.
- Boil the Ramen according to the packet's instruction, rinse under cool water and drain.
- Heat a wok or large frying pan and add peanut oil when wok/pan is hot. When the oil is also hot, add half the beef strips and stir-fry until browned. Place to the side and repeat with remaining beef strips.
- Add the chinese cabbage and capsicum to the wok/pan and stir-fry for about 2 minutes or until heated but not overcooked.
- Add the beef, half of the sauce, half of the spring onion and the Ramen to the wok/pan. Mix gently to combine and heat through.
- Divide between the serving bowls and top with remaining sauce, spring onions and coriander. Enjoy.
Lemon Grass is a edible plant that is popular addition to many cuisines.
Lemon grass has fibrous stalks that are white with green tips. Only the white part is eaten . To best prepare the Lemon grass you will need to cut away the green sections and then strip away the tough outer layers. Finely slice or chop for use.
Curries, salads, stir-frys and soups can all benefit greatly from the inclusion of this tasty herb. They can also be chopped finely and added to a dipping sauce.
Lemon Grass's true flavour is best imparted when it is bruised before adding to your soup or curry as this will help to properly release the flavour. Check out your local farmers market for the pick of the crop.

Hakubaku very much enjoyed its time at the Japan Festival at the Box Hill Town Hall on the 16th May. A great day was had by all of the staff who attended and we sold many cases of noodles. Our van came back empty, which is always a good sign. Be sure to look out for the Japan Festival next year as it is a great way to sample all things Japanese.
As always, the regular markets are an enjoyable outing with plenty to see and buy. Other upcoming markets include:
- Ballarat Lakeside Farmers Market - Saturday 12 & 26 June and 12 & 26 July, Wendouree Parade Lake Wendouree, BALLARAT 9.00am to 1.00pm
- Talbot Farmers Market - which runs from 9.00am to 2.00pm on the third Sunday of every month in the beautiful historic town of Talbot, Victoria. (If you are in Melbourne and looking for a day trip Talbot is well worth the drive).
Soccer Fever - The Beautiful Game
Beginning on June 11, South Africa will be hosting the Soccer World Cup. Why do we find this of interest? Hakubaku Australia has been exporting our noodles to South Africa for over two years now, a small but ever -growing market. Plus as our parent company is based in Japan, we have a number of Japanese ex-pats here at Hakubaku Australia who are soccer mad. Our parent company is one of the sponsers of a team in the J2 league in Japan - Ventforet Kofu, who are doing very well and we hope one day soon to see them promoted to the J1 league.
We have great hopes for the Aussie Socceroos and for Japan's Samurai Blues that they will do their best and wear their colours proudly and bravely and above all, sportingly.
The Soccer World Cup is a fantastic way for all countries to get together and participate in something that allows all nations to shine, not just the larger ones.
And yes, I know I call it soccer, but what can I say. Hakubaku Australia is based in Victoria, Australia - the heartland of the Australian Football League and I only know one game as Football, which is why I am happy to call soccer, The Beautiful Game.
