Rosella is the variety of wheat deemed best for the production of Japanese style noodles, due to his elasticity, adhesiveness and outstanding ability to give the product consistency and an attractive appearance.

Australia is one of the few places in the world suitable for growing Rosella wheat. Specifically produced for Hakubaku, Organic Rosella is grown by traditional 'flood system' methods in the Wimmera District. Organic methods of growth without pesticides or chemicals make for a totally pure raw product with a high nutritional value.

The Flood Plain Organic Group in Balranald, New South Wales, are the group responsible for growing the organic wheat used exclusively in Hakubaku noodles. Controlled flooding from the Murrumbidgee River via a series of dams is used to enrich the soil naturally by contributing river sediment high in nutrients and minerals. Submersion of the fields under water controls any pests, thus eliminating the need for chemicals or pesticides.

Of the 100,000 acres owned by the group (approximately 8,400 times the size of Wembley Stadium in London), 70,000 are used for our organically certified crops, and the remaining 30,000 are devoted to a bird sanctuary. The two can co-exist side by side as the method of farming is completely sustainable and complementary to the environment.
