Cucumber, Prawn & Noodle Salad Serves: 4 |
Ingredients175g Hakubaku Somen Noodles 500g Cooked prawns, peeled, deveined 2 Lebanese cucumbers, cut into strips 1/2 cup Coriander leaves 1/2 cup Mint leaves 1 Large garlic clove, chopped 1 Lime, rind and juice 80ml Vegetable Oil Iceberg Lettuce cups | Method 1. Prepare noodles according to packet directions. Combine with prawns and cucumber strips.
2. Place herbs, garlic, lime rind and juice in a food processor and pulse until chopped. With machines running, add oil in a steady stream until smooth. Season. Place noodle mixture in lettuce cups and drizzle over dressing. |
