Ingredients150g Hakubaku Soba Noodles 1 Litre water 4 x 8g sachets instant miso powder 60ml soy sauce 2 tablespoons mirin 125g diced firm tofu 2 green onions (shallots), sliced 1 sheet roasted nori, shredded | Method 1. Bring a saucepan of water to the boil, Stir in noodles. Cook for 7-8 minutes, until tender. Drain well, then rinse under hot water. Keep warm.
2. Bring water to the boil in saucepan. Dissolve miso in boiling water. Stir in soy sauce and mirin.
3. Divide noodles among serving bowls. Pour hot miso soup over. Top with tofu, green onions and roasted nori. Serve immediately.
