Smoked Salmon Noodle Salad |
Ingredients100g Smoked salmon, sliced into strips 4 Spring onions, sliced thinly 20g Baby capers 50g Mixed lettuce, sliced thinly 100g Continental cucumber 1/4 lengthways and sliced. 1 Lemon (1/2 for juice and 1/2 for wedges) 50ml Extra virgin olive oil Freshly ground black pepper 300g Hakubaku Udon noodle, boiled and stained | Method 1. Combine all ingredients, except the lemon juice and wedges, in a bowl and mix well.
2. Place salad onto 4 serving plates. Squeeze lemon juice on top and garnish with lemon wedges. |
