Somen Noodle Stir-Fry with Prawns Serves: 4 |
Ingredients3 teaspoons Sesame Oil 1 Onion, Sliced 1 Red Capsicum, seeded and sliced 1 Carrot, sliced diagonally 2 teaspoons Finely grated ginger 750g Raw King prawns, peeled, tails left intact 270g (1 packet) Hakubaku somen noodles 100g Baby spinach leaves 60 ml Soy sauce 2 Tablespoons Mirin | Method 1. Heat oil in a wok on high. Stir-fry onion, capsicum and carrot, until just tender. Add ginger and cook for another minute before adding prawns. Cook for 4-5 minutes, until prawns are golden and cooked through.
2. Meanwhile, place noodles in a bowl, pour over boiling water and stand until soft. Drain and set aside.
3. Add spinach, noodles, soy and mirin to wok. Cook until spinach is wilted and serve immediately. |
